Fennel Soup, Take 2
Oh boy, was this ever good! I made a few substitions, but this soup is definitely good and will be made again.
Jill's original recipe called for chicken fat, which I didn't have so I used olive oil, and also fennel seed, which I didn't have, so I left it out. I didn't have sour cream to garnish, so I used home made yogurt. The result was nice and tangy.
The soup tasted like really creamy potato soup, but slightly sweeter. But I like the fact that the fennel didn't dominate. It was more like a light touch right at the end.
