Eggs Benedict
Eggs Benedict is tricky to photograph. This looks awful. But it wasn't!
I have discovered TikTok. For those of you who don't know what that is, it's a social media platform based on short videos.
I have been playing around in Food TikTok and I have about a thousand recipes I want to try.
This hollandaise recipe comes from a creator on TikTok called Moorethanahousewife. Here's a link to her video...
I followed her technique exactly, and although the sauce was a little thin, I think that was because I needed to blend it a little longer.
I also tried poaching some eggs with some new silicone molds I bought on Amazon. The molds worked well, and had I not spilled some of the whites out before they landed in the pot of water, they would have been perfect!
The hardest thing about Eggs Benedict is the timing. There are several different parts, and you want the whole thing to come together at the same time. Having said that, and made the recipe, I think I could have done this in a much better order. My instructions here will reflect the changes.
Here's what you'll need to pull this off...
Eggs Benedict- makes one serving!
1 English Muffin
5 eggs
1 lemon
1 stick of salted butter, melted + extra (softened) for English Muffins
2 slices of deli ham- or however much you want
2 slices of cheddar cheese (optional)
Equipment:
saucepan
silicone egg poaching molds (optional)
blender
toaster
Instructions:
Split the English Muffin and toast lightly and spread with softened butter- set aside on a plate. Put about 2 inches of water in the saucepan and put on medium high heat on the stove.
Make sauce:
In the blender container, put 3 egg yolks and the juice of one lemon. Buzz it up for a few seconds to get things going. With the blender running, slowly pour in the melted butter. Blend until the sauce reaches the desired consistency- set aside.
Begin assembly: put as much deli ham as you want on each half of the English Muffin. Top the ham with a slice of cheese.
The water should be boiling. Spray your silicone egg poachers with non stick cooking spray because you do not trust them. Crack one egg into each silicone holder. Put the eggs in the saucepan of boiling water and cover them. LEAVE THEM COMPLETELY ALONE FOR 5 MINUTES!
Remove the eggs from the silicone molds by running a case knife around the edges of the egg, then sliding it out of the mold onto the cheese. Season the eggs with salt and pepper.
Pour the desired amount of sauce on the eggs and season with a bit more salt and pepper.
Feast!
